O ‘Lima Signature Cuisine.
Cocina peruana en el corazón de Bay Harbour, presenta platos fusión de la cocina peruana con el
toque gourmet, una creación del chef ejecutivo, German González. El chef ha logrado la fusión de
platos peruanos con la fusión de la chicha morada en diversos elementos gastronómicos. Podríamos
decir que es el primero en la introducción de Maíz Morado en la fusión de la cocina peruana, con el
Ceviche en salsa de chicha morada, donde el cítrico de limo se fusiona con la chicha morada en una
fusión de mermelada.
O’Lima Executive Chef German Gonzalez (Adrianna's in Surfside) returns to the neighborhood with O'Lima
Signature Cuisine in Bay Harbor. The space: The former Le Pine space is now a polished 53-seat dining
room with soft pendant lighting, white table clothed tables and carved wooden sculptures. A handful of
outdoor patio seats are nicely buffered from Kane Concourse traffic.
The dishes: Peruvian fusion with Japanese influences. Tiradito de Aji Amarillo, featuring sashimi-style cuts
of fish in a house-made yellow pepper sauce and a cooked Ceviche a la Brasa, which plays on the traditional
citrus-cured ceviche get things started. Classic Peruvian staples abound, such as Lomo Saltado, made by
slow braising the beef, bourguignon-style, and then adding the traditional elements of onions and tomato.
Other hearty mains include Pato Magret, a Canadian duck breast dish with an aji amarillo glaze atop a bed
of huancaina-dressed risotto. The Fiocchi de Pera are pasta pouches filled with gorgonzola cheese and pear,
then drizzled with a chicha morada sauce.
