Easy Banana Brea Muffins
INGREDIENTS
Makes 12 muffins
• 2 very ripe bananas, mashed (approx
1 cup (225g) mashed)
• cup ( g) whole wheat flour (or 156 calories per muffin
use 1:1 gluten free substitute)
• cup ( g) coconut sugar (or other Macros per muffin :
dry sugar) 3g rotein 29g Carbs 5g Fat
• 1 tsp vanilla extract
• ½ cup (125ml) soy milk METHOD
• ½ tsp salt Prepare a muffin tin and preheat oven to F
• 1 tsp apple cider vinegar 1. Peel and mash bananas in a medium sized bowl.
• 1 tsp baking soda . Add flour, sugar, vanilla e tract, soy milk, salt, and
• 1 tsp baking powder chocolate chips to the bowl and mix together.
• ½ cup (120g) chocolate chips . Add baking soda and baking powder to the mi and
pour the apple cider vinegar over top (it should start to
bubble) and mix into the batter well.
. Add large spoonfuls to prepared muffin tin and bake
for approx. 20 mins, until golden brown on top. Let cool
and enjoy!
