Bottles on the back bar should be shining and free of dust.
The back bar should be kept neat and free of clutter.
Fridge doors and seals should be cleaned regularly.
Polishing cloths and spray bottles should not be placed in view of guests.
A place for everything and everything in it’s place.

The water station is to be refi lled regularly during service.
It should be well stocked with:
Water glasses
Water jugs x 2
Napkins x 2 neat, straight piles
Water jug handles should always be in the 5 o’clock position as you approach
the station.
