ROASTED DUCK WITH POTATO DUMPLINGS

                                         AND SAURKRAUT













                                                                              Ingredients:


                                                                   A duck (weight approx 2 kg)

                                                                                 500 g sauerkraut

                                                                                         1 kg onion

                                                   Potato dumplings, salt, cumin and honey

     Preparation:



     • Salt the duck a lot one day ahead. Before  roasting clean
         the duck with water. Then place it in the oven on a grill

         so that it does not touch the dish bottom. Add salt and

         cumin.
     • Roast the duck for about 2 hrs till the meat gets tender

         and during the roasting keep adding the duck´s gravy. In

         the meanwhile prepare the sauerkraut.

     • Add duck fat and onion pieces on a frying pan. Fry it till
         it turns brown. Then add sauerkraut (previously

         washed). Add salt, cumin and a tablespoon of honey.

         Stew for about 30 min.
     • Repose for a little while then divide into portions. Serve

         on a plate with sauerkraut and dumplings. At last spread

         duck´s gravy over it.
